Students in this program will study food components and the processes by which agricultural commodities are converted into edible foods and beverages. They will learn about the sensory, chemical, microbiological, and safety properties of foods. Through tastings and field trips to local food and beverage producers, students will experience Spanish food, beer, and wine industry practices, food habits, and culture. Burgos is a midsize town with a rich history and ideal weather, 150 miles north of Madrid, with convenient bus and train routes to the North, Atlantic Coast (Santander, Bilbao, San Sebastian) and to Barcelona or Paris. The course includes two overnight trips to Madrid and Logroño (Rioja wine country).

Professor Guinard is a sensory and consumer scientist whose research focuses on the sensory properties of foods and beverages, food preferences and food intake. He teaches undergraduate, graduate and online extension courses in food science, sensory science and consumer science. He is a leading expert on Spanish foods and beverages, and their role in Spanish culture.

This Program carries a total of 8 units. Enrolled students must take both courses listed. Auditing is not an option.

Accommodations

You will be staying at the Residencia Universitaria San Agustín in central Burgos. The Residencia is a remodeled 200 year-old building, which is a dorm-like facility with clean and comfortable rooms. Each room has a bed (two beds for double occupancy rooms), a desk, and a bathroom. You will have access to the Residencia's library, gymnasium and tennis and basketball courts. Alcohol is not permitted on the premises and this rule is strictly enforced. Rooms will be cleaned Mondays through Fridays and fresh bed linens provided once a week. You will need to bring your own towels. They will do your personal laundry once a week. To receive laundry service you will need to mark your clothes and to have a bag with your name on it.

Meals

Meals will be provided three times a day including weekends by the Residencia cafeteria. The cafeteria will have limited options for vegetarians. Please note that if you are a strict vegetarian or vegan, the Residencia cafeteria may not be able to accommodate you and you should budget to spend extra money to supplement your meals.

Fees

Fees for Summer Abroad include the Summer Abroad Program Fee, Course Fee, and Accommodations and Activities Fee. The Accommodations and Activities Fee covers lodging, selected meals (if included), selected field trips, group accidental death & dismemberment and emergency health insurance, select publications, and additional program specific costs. Air fare is not included. All fees are subject to change.
